Cabernet Sauvignon

Silverboom Black Label Cabernet Sauvignon is intense deep red in the glass with a dark, almost black hue. In its aroma you are met with a wealth of red and black berries such as blackcurrants, strawberries and blueberries. In the mouth the wine is experienced as full-bodied and concentrated with a classic Cabernet Sauvignon character. In its taste the fragrant notes make a return, with the blackcurrant dominating though beautifully supplemented by subtle tones of oak and a slightly spiced touch.

Winemaking

From grape
to bottle

The Cabernet Sauvignon grapes for Silverboom Black Label are specially selected by the winemaker and harvested from well-drained wine fields where the soil is characterised by granite and shale, which gives the vines a hard surface to work in. This results in pliant stalks and thus more intensity in the grapes. The grapes are plucked in the early morning hours at the end of March and brought directly to the winery. Here, the grapes are lightly pressed before undergoing a 36 hour-long maceration. After maceration the wine is fermented at controlled temperatures in stainless steel tanks before being allowed to rest in the tanks for 3 weeks. Once the wine has settled, it is gently aged in oak barrels, thereby achieving its high quality.

In Stellenbosch,
Cabernet Sauvignon is king!
